Mango Shrikhand

This is a delicious traditional indian dessert made with hung yoghurt flavoured with mango and garnished with pistachios, rose petals and almonds. It is served chilled. It sets well and has the right consistency when made with home made yoghurt. You could probably use greek yoghurt instead of the regular.

Ingredients:
2 cups hung yoghurt
1 cup mango pulp
1/2 cup whipping cream
1/2 cup fine sugar
1/4 tsp powdered cardamom
a pinch of saffron

Instructions:
1. Blend together the hung yoghurt, mango pulp and fine sugar in a Vitamix or a powerful blender.
2. Whisk the whipping cream in a stand mixer. Dissolve the saffron threads in a tbs of milk.
3. Fold in the whipped cream into the yoghurt mango blend.
4. Add the cardamom powder and saffron milk to it. Mix well. Transfer to a serving bowl.
5.Garnish with chopped pistachios, almonds and rose petals. Chill in the refrigerator and enjoy!

    Such a dreamy looking dessert, so rich and silky. If you don’t mind me asking, what is ‘hung yogurt’? Is it a brand?

      Thanks Bernice. Yes it is a dreamy delicious dessert which is very easy to make. Hung yogurt is yogurt drained of all its whey. This is done by putting the yogurt in a cheese cloth and hanging it from a hook so that all its whey drains out over a sink or bowl. It does take time but the drained yogurt is so good for desserts, marinades, dips etc. We usually let it drain over night. Instead of hanging sometimes we place the yogurt cheese cloth ball in a strainer kept over a bowl and leave it in the fridge to drain. It is the same process like making home made cottage cheese. Please feel free to ask me anything, I don’t mind at all. Thank you.

    I’d love to make this using Greek yogurt. Love the flavors and how it presents. Just one thing, I cannot see the instructions…

      I just realized that the instructions added in the WPRM plugin did not get saved, though they were there in the post itself. I have fixed it now by adding them to the plugin as well.
