Mango Shrikand

This is a delicious traditional indian dessert made with hung yoghurt flavoured with mango and garnished with pistachios, rose petals and almonds. It is served chilled. It sets well and has the right consistency when made with home made yoghurt. You could probably use greek yoghurt instead of the regular.

Ingredients
  

  • 2 cups hung yoghurt
  • 1 cup mango pulp
  • 1/2 cup whipping cream
  • 1/2 cup fine sugar
  • 1/4 tsp powdered cardamom
  • a pinch of saffron

Instructions
 

  • Blend together the hung yoghurt, mango pulp and fine sugar in a Vitamix or a powerful blender.
  • Whisk the whipping cream in a stand mixer. Dissolve the saffron threads in a tbs of milk.
  • Fold in the whipped cream into the yoghurt mango blend.
  • Add the cardamom powder and saffron milk to it. Mix well. Transfer to a serving bowl.
  • Garnish with chopped pistachios, almonds and rose petals. Chill in the refrigerator and enjoy!
