    Cheesy Bread Omelette Sandwich

    This is a simple yet so yummy bread egg omelette sandwich,  so quick and easy to make for a Sunday brunch. I love eating it hot. I cannot resist the tantalizing aromas that fill the air – the delightful smell of bread, egg, onions, green chillies and black pepper as the omelette is being fried topped with bread slices makes my mouth water.

    Fond memories of food that time cannot erase come back alive. Back in my University days this bread omelette sandwich was what I would die for. I would do anything, wait for my turn in the hot sun, miss my class……..or literally anything, but not miss out on this incredible sandwich. I don’t know why, but there seems to be some magic in this black pepper, onion and green chilli combo – their combined flavours with the egg taste irresistibly delicious! I still continue to enjoy this simple sandwich to this day. Though I try to create variations of it such as with cheese, jalepeños etc….nothing can beat the taste of this simple bread egg omelette sandwich.

    Here’s the recipe

    Ingredients:
    2 slices of bread (brown or white)
    1 egg
    1/2 a small onion roughly chopped
    1 green chilli chopped
    2 tbs fresh cilantro chopped
    1 tbs vegetable oil/olive oil
    salt to taste
    pepper
    cheddar/swiss cheese slices

    Instructions:
    1. Whisk together in a bowl chopped onions, green chilli, cilantro, salt, pepper and egg.
    2. Heat a cast iron skillet or a non-stick pan. When hot enough add the oil and pour in the egg mixture. Turn down the heat to medium. Spread it into a rectangle as shown in the video.
    3. Top the omelette with the bread slices and sprinkle pepper over them.
    4. Wait until you see the sides slightly browning, or you can just lift up the omelette to check. Do not over brown.
    5. Turn over the omelette. Place the 2 cheese slices over it. Then close the sandwich by turning over one slice over the other as shown in the video.
    6. Sprinkle more black pepper over the sandwich. Cut it into 2 triangles and enjoy it hot with some ketchup or mint chutney.

    Notes:
    1. For those who want to make with two eggs you just need to double the quantity of onions..
    2. You can make variations of this sandwich according to your taste by replacing green chillies with jalapeños and cheese slices with grated cheese of your choice.
    3. You could also add chopped green or red pepper in your egg omelette. Try different variations and enjoy! But don’t forget the black pepper which gives a good punch and is the hero of this sandwich!
