This chicken is made from one of the hottest varieties of garlic called ‘Georgian fire’ that I purchased from the farmers market at the garlic festival in Ottawa. It is a strongly flavoured gourmet garlic that is known for its rich robust flavour. The pleasantly hot and spicy taste of this garlic was standing out and the chicken was so excruciatingly delicious that we couldn't stop eating.
Clean, wash and drain the whole chicken and set aside.
Grind together the Georgian fire garlic cloves and green chillies to a paste with a little salt.
Set the sauce pan on medium heat, then add the olive oil. Put in the lightly pounded black pepper corns, coriander & cumin seeds immediately followed by the chilli garlic paste.
Now throw in the chicken pieces and salt, turn them over and mix well. Sprinkle a little water from the sides.
Cover with a lid and let them steam on simmer till completely cooked and a little browned.
Switch off the stove, serve hot and enjoy with rice or pasta.
