I used to make Fresh fruit crisp a lot when my kids were small and came home hungry from school. They loved it very much. Now I made this for my grand son, though my kids still love eating it as much as they did before. This is a recipe from Pillsbury and it is my favourite one as it is so simple and easy to make and yet so nutritious with all the fresh fruits, oats and nuts. You can make many variations of it using whatever fruits you have available in your kitchen. I added walnuts to it (it was not in the recipe) and it gave a nice crunch to it. The recipe calls for rolled oats, I used quick cooking oats which I had at home and it made no difference.
Ingredients:
6 cups fresh fruits (apples, pears, plums, peaches, apricots, berries etc)
1 tsp cinnamon
1 tbs water
1 tsp lemon juice
Topping
1 cup rolled oats
3/4 cup all purpose flour
3/4 cup firmly packed brown sugar
1/2 cup unsalted butter chilled
1 cup walnuts chopped
Instructions:
1. Heat oven to 375°F. Cut the fruits into small dices and place them in a baking dish. Sprinkle with cinnamon, brown sugar and lemon juice.
2. Combine together flour, oats, butter and brown sugar in a bowl. Cut the butter into cubes and mix it with your fingers or a fork until the flour mixture is crumbly. Add the chopped walnuts, mix lightly.
3. Now layer the flour oats mixture evenly on the fruit in the baking dish.
4. Bake for 25 – 30 minutes until the topping is golden brown and crisp. Serve it warm with whipped cream or ice cream. I love to eat it with vanilla ice cream. Enjoy!

I love fruit crisp! Also one of my favorite desserts growing up! Though my mother used to make only apple crisp I have dabbled with other fruits! Currently on the blueberry train. I like the idea of peaches though…I could do blueberry peach or cherry peach crisp!
